Conclusion

From this experiment, a new method of determining the spiciness of a type of pepper quantitatively was found and a new mathematical formula relating the mass of capsaicinoids present per gram of pepper to its spiciness in Scoville Heat Units (SHUs) was established.

Piquancy = 2.97 × 106 SHU · g Peppers/g Capsaicinoids × Mass of Capsaisinoids per Gram of Pepper

The method is simple, cheap, objective and quantitative. It can even be used in everyday life to measure the spiciness.
